Vegan Gluten-Free Strawberry Banana Bread
Ingredients
- 3 mashed ripe bananas
- 2 flax eggs (2 tbsp flax seed meal mixed with 4 tbsp warm water)
- 1/2 cup melted vegan butter or coconut oil
- 1/2 cup maple syrup
- 1/2 cup almond milk
- 2 cups all purpose flour (sub oat flour or 1-1 GF flour)
- 1 tsp baking soda + 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla
- 1 cup sliced strawberries
Icing
- 1/4 cup confectioners sugar
- 1 tsp vanilla
- 1 tsp water
Preparation
Preheat oven to 375°F
Mix everything except the flour and strawberries in one bowl.
Then, mix in flour.
Finally, fold in the strawberries.
Pour into a greased loaf pan and top with more strawberries if desired.
Bake for 35-40 minutes.
Icing
Mix all icing ingredients until smooth
Drizzle over cooled bread
