Gluten-Free Banana Bread with Easy Substitutions
Ingredients
- 2 cups gluten-free pre-mix
- 4 ripe bananas
- 1/4 cup coconut sugar (substitutable with brown sugar or muscovado)
- 1/2 cup plant-based milk
- 1/2 cup coconut oil
- 1 teaspoon baking powder
- 1 teaspoon vanilla essence
Preparation
Mash the bananas and mix with the sugar and baking powder.
Add the coconut oil and vanilla essence.
Gradually incorporate the flour, mixing well to remove all lumps.
Add the milk approximately and continue mixing.
Pour the mixture into a 10x20 loaf pan and bake at 175°C for 1 hour.
After baking, wait 15 minutes before unmolding and it's done.
Tips
You can replace the gluten-free pre-mix with an equal amount of whole wheat flour for similar results.
