Homemade Gluten Free Vegan Banana Bread

Ingredients

  • 1 chia egg (1 tablespoon chia seeds with 2.5 tablespoons water)
  • 3 overripe bananas
  • 1 teaspoon baking soda (aluminum free)
  • pinch of Himalayan salt
  • 1/3 cup nut butter
  • 2.5 tablespoons coconut oil melted
  • 1/4 cup packed coconut sugar
  • 2 tablespoons maple syrup
  • 1 and 3/4 cup almond flour
  • 1 cup millet flour

Preparation

  1. Preheat oven to 350°.

  2. Line baking dish with parchment paper.

  3. To make the chia egg, combine chia seeds and water in a mixing bowl and set aside for 5 minutes.

  4. Add ripe bananas and mash them.

  5. Next add baking salt, baking soda, almond butter, coconut oil, maple, and coconut sugar. Mix until smooth.

  6. Add the almond and millet flours. Stir well.

  7. Pour into loaf pan and bake for 1 hour.

  8. You can tell when it's ready by checking that it is firm and toothpick slides out clean.

Tips

  1. You can always play with other flours or sweeteners to best suit your needs!

  2. It turned out dense and moist!

  3. It’s great with a little honey drizzle but if you’re going vegan, almond butter and maple drizzle is bomb too!
