Gluten-Free Banana Bread Donuts
Ingredients
- 3 eggs
- 3 ripe bananas
- 1/3 cup coconut flour
- 1/4 cup nut butter
- 1/4 cup melted ghee or butter
- 2 tbsp maple syrup or honey
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla
Chocolate topping
- 1/2 cup chocolate chips
- 1 tsp coconut oil
Preparation
Preheat oven to 350°F
In a bowl, whisk 3 eggs
Add the 3 bananas and mash them
Add all the other donut ingredients and mix together well with a mixer
Grease donut pans and add batter about 3/4 of the way up
Bake at 350°F for 20 minutes
Remove and let cool before taking out of the donut pan
In a bowl, mix the chocolate chips and coconut oil
Melt in the microwave for 30 seconds, remove, stir, and repeat until the chocolate is melted
Dip half the donuts fully in the mixture and drizzle the other half
Put in the fridge to let the chocolate harden or enjoy immediately
