Vegan Stuffed Cabbage Rolls
Ingredients
- 10 large cabbage leaves
- 1 cup cooked rice
- 1 cup cooked brown lentils
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, grated
- 1/2 red bell pepper, diced
- 1/2 cup tomato sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
Preparation
Blanch the cabbage leaves in boiling water until soft and pliable.
In a bowl, mix together the cooked rice, cooked brown lentils, diced onion, minced garlic, grated carrot, diced red bell pepper, soy sauce, dried thyme, dried oregano, paprika, salt, and pepper.
Place a portion of the filling on each cabbage leaf and roll up tightly.
Arrange the rolls in a baking dish or pot with tomato sauce spread on the bottom and poured over the top.
Bake in a preheated oven or simmer until the rolls are heated through and tender.
