Vegan Stuffed Cabbage Rolls

Ingredients

  • 10 large cabbage leaves
  • 1 cup cooked rice
  • 1 cup cooked brown lentils
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1/2 red bell pepper, diced
  • 1/2 cup tomato sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Preparation

  1. Blanch the cabbage leaves in boiling water until soft and pliable.

  2. In a bowl, mix together the cooked rice, cooked brown lentils, diced onion, minced garlic, grated carrot, diced red bell pepper, soy sauce, dried thyme, dried oregano, paprika, salt, and pepper.

  3. Place a portion of the filling on each cabbage leaf and roll up tightly.

  4. Arrange the rolls in a baking dish or pot with tomato sauce spread on the bottom and poured over the top.

  5. Bake in a preheated oven or simmer until the rolls are heated through and tender.
