Homemade Vegan Tofu Gnocchi

Ingredients

Gnocchi

  • 250g potatoes
  • 250g firm tofu
  • 175g flour
  • Salt to taste

Sauce

  • 1 onion
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 3 tablespoons tomato paste
  • 1 1/3 cup tomato sauce
  • 1/4 cup vegan cream
  • Salt to taste

Preparation

  1. Boil the potatoes until soft.

  2. Mash the potatoes together with the tofu.

  3. Add flour and salt to taste, then knead until it forms a dough.

  4. Cut the dough into 4 pieces and roll each into logs.

  5. Cut the logs into small pieces on a floured surface.

  6. Boil the gnocchi pieces in salted water until they float to the top.

  7. Fry the onion and garlic in oil.

  8. Add dried oregano, paprika, and tomato paste, then sauté for a few minutes.

  9. Add tomato sauce, vegan cream, and salt to taste.

  10. Toss the cooked gnocchi in the sauce and cook for 2-3 minutes.

  11. Serve.
