Creamy Vegan Sausage and Pea Skillet
Ingredients
- 2-3 vegan sausages, cut into slices
- 200ml green peas (about 1 cup frozen green peas)
- 1 small red onion, diced
- 1 garlic clove, minced
- 2-3 servings of bulgur or couscous (rice also works)
- 1 tbsp vegetable fond (concentrated)
- 1-2 tbsp soy sauce (Japanese soy sauce used)
- 300ml oat cream
- 1-2 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1-2 tbsp oil
Preparation
Begin by cooking the bulgur or rice according to the instructions.
In a frying pan, add the oil, diced onion, and minced garlic. Add the sliced sausages and fry until crispy, then cut them into smaller pieces.
Add the green peas to the frying pan along with the soy sauce, vegetable fond, dried thyme, dried oregano, salt, and pepper.
Pour in the oat cream and allow the mixture to simmer for 8-15 minutes. Taste and adjust the seasoning as needed. Allow it to simmer until the cream has reduced.
