Creamy Sundried Tomato Vegan Pasta Dish
Ingredients
- 3 servings of pasta
- 4 garlic cloves
- Oil for frying
- 300ml oatcream or other vegan cooking cream
- 1 red onion (optional)
- 150g sundried tomatoes
- Salt & black pepper
- Vegan parmesan
- 100g vegan feta
- 150g natural or silken tofu
- Spinach
Preparation
Boil 3 servings of pasta in salty water.
Fry 4 garlic cloves in some oil until golden. Optionally, add 1 red onion with the garlic and fry until golden brown.
Add 300ml oatcream (or other vegan cooking cream) to the pan.
Add 150g sundried tomatoes to the pan. Do not use the oil from the tomatoes.
Season with salt & black pepper. Sprinkle a generous amount of vegan parmesan.
Let the mixture simmer for 10 minutes to bring out the flavour.
In a mixer, add 100g vegan feta & 150g natural (or silken) tofu.
Add the oatcream mix to the mixer. You can let it cool slightly so the mixer doesn't overheat.
Mix until smooth.
Once the sauce is smooth, pour it over the pasta. Mix well.
Add some spinach to the pasta.
Add more vegan parmesan on top and some sundried tomatoes for garnish.
Serve and enjoy.
