Creamy Sundried Tomato Gnocchi

Ingredients

  • 500g gnocchi
  • 250ml oat cream
  • 1 small jar of sundried tomatoes (c.a 150g)
  • 2 tsp thyme
  • Salt
  • Black pepper
  • Generous amount of vegan parmesan
  • 1/2 red onion
  • Oil
  • 2 handfuls of spinach

Preparation

  1. Place gnocchi in cold water for 30 minutes to swell. Then drain the water.

  2. Fry the gnocchi in a generous amount of oil until slightly crispy. Remove from the frying pan and place on a plate.

  3. In the same frying pan, add the diced onion. Fry until golden brown.

  4. Pour in the oat cream and add the chopped sundried tomatoes.

  5. Season with black pepper and salt. Let simmer for 2-3 minutes.

  6. Add the fried gnocchi back into the pan.

  7. Add the spinach and mix everything together.

  8. Sprinkle a generous amount of vegan parmesan on top.

  9. Eat and enjoy!
