Vegan Cabbage Rolls
Ingredients
- 10 large cabbage leaves
- 1 cup cooked rice
- 1 cup cooked brown lentils
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, grated
- 1/2 red bell pepper, diced
- 1/2 cup tomato sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
Preparation
Blanch the cabbage leaves in boiling water until soft and pliable
In a bowl, combine the cooked rice, cooked brown lentils, diced onion, minced garlic, grated carrot, diced red bell pepper, tomato sauce, soy sauce, dried thyme, dried oregano, paprika, salt, and pepper to make the filling
Place a portion of the filling on each cabbage leaf and roll up tightly, tucking in the sides to enclose the filling
Arrange the rolls in a baking dish or pot, cover with additional tomato sauce if desired, and bake in a preheated oven or simmer on the stovetop until heated through and tender
