Raw Vegan Marinated Zucchini Rolls
Ingredients
- thin slices of zucchini
- lemon juice
- soy sauce or coco aminos
- dried paprika powder
- thick slices of tomato
- walnut paste
Preparation
Slice zucchini thinly using a vegetable peeler.
Marinate the zucchini slices in lemon juice, soy sauce or coco aminos, and dried paprika powder for about an hour.
Cut thick slices of tomato.
Wrap each tomato slice with the marinated zucchini and some walnut paste.
Tips
Lemon juice may balance the soapy taste of raw zucchini without needing added sweetness.
