Simple Avocado and Mushroom Breakfast Toast

Ingredients

  • 1/2 avocado
  • 1 slice sourdough bread
  • 2 handfuls chopped chestnut mushrooms
  • 8 chopped cherry tomatoes
  • salt
  • pepper
  • 1 teaspoon Italian herbs
  • olive oil
  • 1 handful spinach

Preparation

  1. Toast the slice of sourdough bread.

  2. Heat some olive oil in a pan over medium heat.

  3. Add the chopped chestnut mushrooms, chopped cherry tomatoes, salt, pepper, and Italian herbs. Cook for 3-4 minutes.
