Simple Avocado and Mushroom Breakfast Toast
Ingredients
- 1/2 avocado
- 1 slice sourdough bread
- 2 handfuls chopped chestnut mushrooms
- 8 chopped cherry tomatoes
- salt
- pepper
- 1 teaspoon Italian herbs
- olive oil
- 1 handful spinach
Preparation
Toast the slice of sourdough bread.
Heat some olive oil in a pan over medium heat.
Add the chopped chestnut mushrooms, chopped cherry tomatoes, salt, pepper, and Italian herbs. Cook for 3-4 minutes.
Add the spinach and cook until wilted, about 1 minute.
Serve with the toasted bread and avocado.
