Blood Orange Chocolate Cake
Ingredients
Wet
- 1/2 cup mild olive oil
- 3/4 cup brewed coffee
- Juice of 3-4 blood oranges (I needed 4)
- 1/4 cup oat milk or almond milk
Dry
- 1 cup coconut sugar
- 1 cup regular sugar or coconut sugar
- 2 cups flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 cup cocoa powder
- 1/2 tsp pink salt
- 2 tsp orange zest
- 1 tsp vanilla
Frosting
- One can coconut cream
- 1 ripe avocado
- 1 cup icing sugar
- 3 oz melted dark chocolate
- 1 tsp vanilla powder
- 1/3 cup cocoa powder
Glaze
- 3 oz dark chocolate
- 2 tsp coconut oil
Preparation
Preheat the oven to 350 degrees F
Combine all wet ingredients in one bowl
Combine dry ingredients in one bowl
Slowly add dry ingredients to wet ingredients and mix to combine
Place batter equally into two greased and parchment-lined cake pans
Bake for 40-45 minutes or until the center is cooked, checking with a toothpick
Frosting
Mix together well and frost as desired
Glaze
Melt the dark chocolate and coconut oil together using a double boiler
Drizzle the melted glaze on top
