Vegan Choco Chip Cookies

Ingredients

  • 80 grams rolled oats
  • 50 grams all-purpose flour
  • 30 grams cocoa powder
  • 50 grams coconut sugar (optional if you want it extra sweet)
  • 1 teaspoon baking soda
  • a pinch of salt
  • 1 cup almond butter 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons water or almond milk
  • 100 grams vegan chocolate chips

Preparation

  1. Preheat the oven to 350 degrees F (175 C)

  2. Line a baking sheet with parchment paper

  3. Put the rolled oats, flour, cocoa powder, coconut sugar (optional), baking soda, and salt into the bowl of a food processor and process until the oats are ground into a rough flour

  4. Add the almond butter, maple syrup, and vanilla and process until a crumbly dough forms

  5. With the food processor running, add the water or milk and process until the dough comes together

  6. Add in the chocolate chunks

  7. Shape the dough into balls, and place on a parchment paper-lined baking sheet and let them bake for about 10 minutes, until the edges are crisp, but the center is still a little soft
