Oven Roasted Chickpea Tomato Pasta
Ingredients
- pasta
Oven roasted chickpeas
- 200g chickpeas
- favourite spices (e.g., curry)
Sauce
- 2 red onions
- 3 garlic cloves
- water
- a cut up tomato
- mix of paprika powder and chilli flakes
- half a tsp vegetable stock
- half a tsp pepper
- 200ml tomato sauce
Preparation
Preheat oven to 180°C
Mix chickpeas with favourite spices and bake for 15 minutes.
Chop onions and garlic
Sauté onions and garlic in a pan with water until soft
Add chopped tomato, paprika powder, chilli flakes, vegetable stock, pepper, and tomato sauce to the pan
Simmer the sauce for 10-15 minutes until thickened
Cook pasta according to package instructions
Serve pasta with sauce and top with roasted chickpeas
