Oven Roasted Chickpea Tomato Pasta

Ingredients

  • pasta

Oven roasted chickpeas

  • 200g chickpeas
  • favourite spices (e.g., curry)

Sauce

  • 2 red onions
  • 3 garlic cloves
  • water
  • a cut up tomato
  • mix of paprika powder and chilli flakes
  • half a tsp vegetable stock
  • half a tsp pepper
  • 200ml tomato sauce

Preparation

  1. Preheat oven to 180°C

  2. Mix chickpeas with favourite spices and bake for 15 minutes.

  3. Chop onions and garlic

  4. Sauté onions and garlic in a pan with water until soft

  5. Add chopped tomato, paprika powder, chilli flakes, vegetable stock, pepper, and tomato sauce to the pan

  6. Simmer the sauce for 10-15 minutes until thickened

  7. Cook pasta according to package instructions

  8. Serve pasta with sauce and top with roasted chickpeas
