Vietnamese Lemongrass Chicken Rice Noodle Salad

Ingredients

  • 2 lbs chicken thighs
  • Rice noodles
  • Salad greens

Chicken marinade

  • 1 stalk lemongrass
  • garlic
  • ginger
  • soy sauce
  • fish sauce
  • neutral oil

Pickled vegetables

  • carrot
  • cucumber
  • radish

Lime vinaigrette

  • lime juice
  • garlic
  • chili
  • brown sugar
  • fish sauce
  • vinegar
  • oil

Fresh herbs

  • cilantro
  • basil
  • mint

Optional additions

  • boiled egg
  • cherry tomatoes

Preparation

  1. Blend the chicken marinade and let it sit for at least 30 minutes

  2. Mix the lime vinaigrette and use half to pickle the vegetables

  3. Grill the chicken until charred and juicy

  4. Toss rice noodles and salad greens with dressing, layer all components, and finish with fresh herbs
