Mushroom Cauliflower Fried Rice

Ingredients

  • 1.5 tablespoon sesame oil
  • 6 to 7 large garlic cloves, chopped
  • 5 stalks green onion, chopped
  • 1 large red pepper, chopped
  • 8 oz white mushrooms, sliced
  • 2 tablespoons soy sauce
  • 2 teaspoons sriracha, or to taste
  • 2 teaspoons rice vinegar
  • 16 oz cauliflower rice
  • 1/4 teaspoon black pepper, or to taste
  • salt, to taste

Preparation

  1. Heat sesame oil in a large skillet or wok over medium-high heat.

  2. Add garlic and green onions, and sauté until fragrant, about 1-2 minutes.

  3. Add red pepper and mushrooms, and cook until vegetables are tender, 3-5 minutes.

  4. Stir in cauliflower rice, soy sauce, sriracha, rice vinegar, black pepper, and salt to taste.

  5. Cook, stirring frequently, until the mixture is well combined and heated through, about 5 minutes.
