Mushroom Cauliflower Fried Rice
Ingredients
- 1.5 tablespoon sesame oil
- 6 to 7 large garlic cloves, chopped
- 5 stalks green onion, chopped
- 1 large red pepper, chopped
- 8 oz white mushrooms, sliced
- 2 tablespoons soy sauce
- 2 teaspoons sriracha, or to taste
- 2 teaspoons rice vinegar
- 16 oz cauliflower rice
- 1/4 teaspoon black pepper, or to taste
- salt, to taste
Preparation
Heat sesame oil in a large skillet or wok over medium-high heat.
Add garlic and green onions, and sauté until fragrant, about 1-2 minutes.
Add red pepper and mushrooms, and cook until vegetables are tender, 3-5 minutes.
Stir in cauliflower rice, soy sauce, sriracha, rice vinegar, black pepper, and salt to taste.
Cook, stirring frequently, until the mixture is well combined and heated through, about 5 minutes.
