Skyr Cheesecake with Raspberries and Chocolate
Ingredients
- 450 g vanilla skyr
- 3 medium eggs
- 35 g sugar-free vanilla pudding mix
- 150 g raspberries (or other fruits like blueberries, peaches, cherries, plums, strawberries; fresh or frozen)
- 20 g dark chocolate, chopped into small pieces
- 1 tablespoon erythritol (adjust to taste)
- 1 teaspoon erythritol powder for sprinkling
- optional: 30 g vanilla protein powder
Preparation
Mix skyr, eggs, 30 g of pudding mix, erythritol, and protein powder (if using) into a smooth batter.
Pour the batter into two heatproof dishes.
Top with raspberries mixed with the remaining 5 g of pudding mix and dark chocolate pieces.
Bake for about 45 minutes at 180°C with fan assistance.
After baking, let it cool completely. It is best to chill overnight in the refrigerator, but it is not necessary.
Before serving, sprinkle with erythritol powder.
Notes
Recipe makes two portions using 10x15 cm forms.
