Sugar-Free Low-Carb Swiss Roll

Ingredients

  • 6 eggs
  • 100g Erythritol or Xylitol
  • 100g organic whole grain spelt flour
  • 6 tablespoons milk

Preparation

  1. Preheat the oven to 170 degrees.

  2. Separate the six eggs and beat the egg whites until stiff.

  3. Then, whisk the egg yolks with the Xylitol and milk until creamy and yellow.

  4. Gradually stir in the spelt whole grain flour.

  5. Then, fold in the egg whites.

  6. Pour the batter onto a baking sheet lined with parchment paper and spread it out rectangularly.

  7. Bake for 10 minutes.

  8. Fill as desired and roll up.

  1. You can individually vary the base dough and filling to create new variations.
