Spicy Red Lentil, Sweet Potato, and White Bean Dahl

Ingredients

  • 1 red onion
  • 4 garlic cloves
  • 1 package white beans (approximately 220g)
  • 350ml (1 1/2 cup) red lentils
  • 2 medium sweet potatoes
  • 250g tofu
  • 2-3 tbsp Garam masala powder
  • 1/4 tsp extra of Ginger powder and chili powder
  • 2 tbsp tomato paste
  • 800ml water
  • 400ml crushed tomatoes
  • 2 tbsp peanut butter (optional)
  • Oil for frying

Preparation

  1. In a large pot, heat 1-2 tbsp of oil and add diced red onion and crushed garlic. Fry until golden brown.

  2. Add white beans and tofu cut into squares to the pot. Add more oil if necessary along with 2 tbsp of garam masala powder. Fry on medium heat for 3-4 minutes.

  3. Wash and rinse the red lentils. Peel the sweet potatoes and chop them into small squares.

  4. Add the lentils and sweet potatoes to the pot. Pour in the water and mix well. Allow it to boil on medium heat for 10-15 minutes, stirring occasionally.

  5. Add more garam masala powder, ginger, chili, 2 tbsp of tomato paste, 2 tbsp of peanut butter (optional), and crushed tomatoes to the pot. Optionally, add 2 tsp of sugar to balance out the crushed tomatoes.

  6. Allow the mixture to simmer for 10 minutes or until the lentils and sweet potatoes are cooked and soft.

  7. Serve and enjoy with some crushed peanuts on top and bread on the side.
