Silky Handkerchief Pasta with Saffron & Turmeric

Ingredients

  • 350g fresh lasagne sheets or pasta of choice
  • 1/2 tsp saffron threads
  • 1/4 cup olive oil
  • 1 tbsp vegan butter
  • 3 minced garlic cloves
  • 1 tbsp chili powder
  • 1/2 tbsp turmeric
  • 2 tbsp olive oil
  • 4 shallots, peeled thinly sliced
  • 2 tbsp maple syrup
  • 2 tbsp red pepper flakes
  • Sliced chives

Preparation

  1. Place saffron threads in a bowl with 1/2 cup of boiling water.

  2. Heat olive oil in a large frying pan over high heat.

  3. Add shallot ingredients to the pan and fry for 5-7 minutes, separating shallots to prevent sticking.

  4. Reduce the heat to medium-low and cook until shallots are caramelized. Transfer to a plate lined with baking paper to crisp up.

  5. In another pan, combine the sauce ingredients with the saffron water over medium heat and cook for 2-3 minutes.

  6. Bring a large pot of salted water to a boil. Add the pasta and cook for a minute, then transfer directly to the pan with the sauce along with 1/2 cup of pasta water. Stir to incorporate for 1-2 minutes.

  7. Serve the pasta in two bowls and top with the maple shallots and sliced chives.
