Silky Handkerchief Pasta with Saffron & Turmeric
Ingredients
- 350g fresh lasagne sheets or pasta of choice
- 1/2 tsp saffron threads
- 1/4 cup olive oil
- 1 tbsp vegan butter
- 3 minced garlic cloves
- 1 tbsp chili powder
- 1/2 tbsp turmeric
- 2 tbsp olive oil
- 4 shallots, peeled thinly sliced
- 2 tbsp maple syrup
- 2 tbsp red pepper flakes
- Sliced chives
Preparation
Place saffron threads in a bowl with 1/2 cup of boiling water.
Heat olive oil in a large frying pan over high heat.
Add shallot ingredients to the pan and fry for 5-7 minutes, separating shallots to prevent sticking.
Reduce the heat to medium-low and cook until shallots are caramelized. Transfer to a plate lined with baking paper to crisp up.
In another pan, combine the sauce ingredients with the saffron water over medium heat and cook for 2-3 minutes.
Bring a large pot of salted water to a boil. Add the pasta and cook for a minute, then transfer directly to the pan with the sauce along with 1/2 cup of pasta water. Stir to incorporate for 1-2 minutes.
Serve the pasta in two bowls and top with the maple shallots and sliced chives.
