Spring Armenian Salad


  • i used 1 & 1/2 head of cauliflower pulsed to a
  • 1/2c dried cranberries
  • c chives
  • 1/2c chopped toasted cashews & sliced mint


  1. Omitted some of the fruit from the original to fit my macros, but still super yummy! this made four side servings, at under 100 calories each
