Ingredients
- 2 large apples, I used honey crisp
- - Juice from half a lemon
- - Water
- 3 Tbsp apricot jelly
- 1 tsp water
- Cinnamon
- Coconut sugar
- Pastry dough
Preparation
Preheat oven to 375 degrees
Clean apples, core and cut in half straight down the middle from stem down.
Place cut side down, cut thin slices from base of apple to top.
Squeeze half of lemon into bowl
Add water filling half way, stir
Place apple slices water to just covered
Microwave apples for 3 minutes, until softened but not mushy
Roll pastry dough out to 12 inches in length, 3 inches in width.
Place apricot jelly and water in small bowl and microwave for 1 minute
Spread jelly mixture over pasty strips
Sprinkle with cinnamon
Sprinkle with coconut sugar
Place apple at one end of pastry strip with apple skin on outside about half way over the edge. Continue to lay apple slices across the full length of the strip slightly overlapping each apple.
Fold dough over the apples so you can see only the part over the edge of the dough.
Loosely roll, you will see your “?” appear.
Spray coconut oil in muffin tin, add some coconut sugar to coat.
Place rose apple into muffin tin
Bake for 40 minutes, until golden
