Carrot Creamsicle and Mint Chip Spirulina Smoothie Jars
Ingredients
Mint chip spirulina coconut base
- 1 cup frozen cauliflower
- 2 fresh mint leaves
- 2 tablespoons shredded coconut or coconut butter
- 2 dates
- 1 teaspoon spirulina blend
- 2 teaspoons chia seeds
- 1/2 cup almond milk
- 2 tablespoons plant-based yogurt
- 1 small handful kale leaves
- 1/2 teaspoon organic cinnamon
Mint chip mixing layer
- 3 tablespoons chia seeds
- 1/2 cup almond milk
- 4 tablespoons almond yogurt
Carrot creamsicle
- 1 cup steamed peeled carrots
- juice of 1/2 orange
- 1 small or 1/2 large banana
- 1/4 cup almond milk
- 1/2 teaspoon tocos
- 1/2 teaspoon organic cinnamon
- 2 tablespoons plant-based yogurt
- optional: beans from 1/2 vanilla pod
Toppings
- extra plant-based yogurt
- coconut flakes
- shelled pistachios
- cacao nibs
- coconut shreds
- fresh mint leaves
Preparation
Mint chip spirulina coconut
Blend the smoothie into the mixing layer to create desired layers and add to the jar
Top with cacao nibs, coconut shreds, and fresh mint leaves
Carrot creamsicle
Put about 1/4 cup plant-based yogurt in the base of the jar
Blend all smoothie ingredients together
Add the smoothie to the jar
Top with coconut flakes and pistachios and enjoy
