Mint Chip Spirulina Coconut

Ingredients

  • Base layer
  • - 1 cup frozen cauliflower
  • - 2 fresh mint leaves
  • - 2 tablespoons shredded coco nut or coconut butter
  • - 2 dates - 1 teaspoon spirulina blend
  • - 2 teaspoons chia seeds
  • - 1/2 cup almond milk
  • - 2 tablespoons yogurt
  • - 1 small handful kale leaves
  • - 1/2 teaspoon organic cinnamon
  • Mixing layer
  • - 3 tablespoons chia seeds
  • - 1/2 cup almond milk
  • - 4 tablespoons almond yogurt
  • Details
  • - 1 cup steamed peeled carrots
  • - juice of 1/2 orange
  • - 1 small or 1/2 large banana (i personally like it with banana instead of cauliflower since the carrots alone aren’t that sweet)
  • - 1/4 cup almond milk
  • - 1/2 teaspoon tocos
  • - 1/2 teaspoon organic cinnamon
  • - 2 tablespoons of your favorite plant-based yogurt (i used almond yogurt)
  • - optional: beans from 1/2 vanilla pod (pure bliss!) Extras
  • - extra plant-based yogurt
  • - coconut flaked
  • - shelled pistachios

Preparation

  1. Blend in the smoothie to the mixing layer as desired to get your layers and add them in! I topped this with @navitasorganics cacao nibs, coconut shreds, and fresh mint leaves

  2. Carrot creamsicle

  3. To start, put about 1/4 cup of your favorite plant-based yogurt in the base of the jar

  4. Next, blend all your smoothie ingredients together

  5. Add the smoothie

  6. Top with coconut flakes and pistachios and enjoy
