Asap! Gluten-Free Choc Walnut Brownies
Ingredients
- 3 tablespoons flax seeds, ground
- 1/2 cup of water
- 1/2 cup of rice milk (or other plant milk of choice)
- 2 tablespoons peanut butter (or other nut butter)
- 1 cup coconut sugar
- 1/2 cup cacao powder
- 1 1/4 cup self raising gluten free flour
- 1/2 cup walnuts (extra for garnishing)
- FROSTING
- 2 ripe avocados
- 1/4 cup cacao powder
- 3 tablespoons maple syrup (or sweetener of choice)
- 1/2 teaspoon vanilla powder
Preparation
Preheat the oven at 180 º C (or 355 º F)
Mix the ground flax seeds and the water in a bowl and set aside
Combine the dry ingredients in a bowl (coconut sugar, cacao powder, self raising gluten free flour) and mix well
Mix the wet ingredients in a separate bowl (flax egg (flax and water mixture), rice milk and peanut butter) until well combined
Combine the dry and wet ingredients and mix well. Add the walnuts and stir
Pour the mixture in a baking pan with baking paper and bake at for about 20 minutes. I took it out at 20 minutes and let it cool down in the pan so it didn't dry out in the oven
Ombine all ingredients in the food processor
Spread the frosting on top of brownie and decorate with crushed walnuts, coconut, petals or other toppings
