Our Mediterranean Salad Bowl with Sun-Dried Vinaigrette
Ingredients
- for salad
- 2 cups of sliced cucumber
- 1 1/2 cups of chickpeas
- 1 cup of sliced artichoke hearts
- 1/2 cup of sliced black olives
- 1/3 cup of minced red onion
- baby spinach
- for the vinaigrette
- 3 sliced sun-dried tomatoes soaked until softened
- 3 tbs balsamic vinaigrette
Preparation
Combine all ingredients for salad into a large bowl(excluding spinach)
Stir well
For vinaigrette add into a pestle and mortar
Grind until smooth
Serve salad over spinach, add dressing and enjoy???? #threebunnies
