Our Mediterranean Salad Bowl with Sun-Dried Vinaigrette

Ingredients

  • for salad
  • 2 cups of sliced cucumber
  • 1 1/2 cups of chickpeas
  • 1 cup of sliced artichoke hearts
  • 1/2 cup of sliced black olives
  • 1/3 cup of minced red onion
  • baby spinach
  • for the vinaigrette
  • 3 sliced sun-dried tomatoes soaked until softened
  • 3 tbs balsamic vinaigrette

Preparation

  1. Combine all ingredients for salad into a large bowl(excluding spinach)

  2. Stir well

  3. For vinaigrette add into a pestle and mortar

  4. Grind until smooth

  5. Serve salad over spinach, add dressing and enjoy???? #threebunnies
