Quinoa and Black Bean Burger

Ingredients

  • 1/2 cup of red quinoa
  • 1/2 cup of soaked black beans
  • 1 tsp of fresh chopped parsley
  • 1/2 tsp of tsp of garlic powder
  • 1/2 tsp of pink himalayan salt
  • 1/2 tsp of black pepper
  • 1/4 tsp of chili powder
  • 1/4 tsp of cumin powder
  • 1/4 tsp of onion powder
  • 1/8 tsp of cayenne pepper
  • 3 tbs of ground walnuts
  • for the bacon
  • 5oz of tempeh
  • 1 tbs of soy sauce
  • 1 tbs of maple syrup
  • 1/4 tsp of cumin
  • 1/4 tsp of paprika
  • pinch of pink himalayan salt
  • pinch of black pepper
  • for toppings
  • fresh baby arugula
  • sliced hass avocado
  • sliced vine ripe tomato
  • sliced red onion
  • sauce of choice
  • 3-4 whole wheat burger buns

Preparation

  1. Once quinoa is ready add to a mixing bowl along with mashed black beans, parsley, and seasonings

  2. Stir until well combined

  3. Preheat oven to 375°

  4. Grab pieces of burger mix and form into a ball

  5. Place balls onto a baking sheet and gently press to size

  6. Place patties in oven for 10 minutes each side

  7. While patties are in oven combine all ingredients for tempah and marinate for a few minutes(or longer if desired)

  8. In a pan on medium heat add a dash of olive oil and cook bacon slices for 3 minutes each side

  9. Once patties are ready remove from oven and allow 10 minutes to cool

  10. Grab buns and place fresh baby arugula on bottom bun followed by patty, avocado, bacon, tomato, and red onion

  11. Top with sauce of choice and enjoy ? ? ? ? #threebunnies
