Ingredients

  • 2 big handfuls mixed greens
  • 1/3 cup shredded purple cabbage
  • 1/3 cup shredded carrots
  • 1 scallion, diced
  • 1/2 mango, peeled and cubed
  • 1/2 cup edamame
  • a sprinkle of sesame seeds
  • peanuts (optional)
  • fresh cilantro
  • dressing

Preparation

  1. Tbsps EV olive oil, 1 tbsp soy sauce, 1 tsp red curry paste, 1 heaping tsp creamy peanut butter + juice from half a lime, whisked well
