Ingredients
- 2 big handfuls mixed greens
- 1/3 cup shredded purple cabbage
- 1/3 cup shredded carrots
- 1 scallion, diced
- 1/2 mango, peeled and cubed
- 1/2 cup edamame
- a sprinkle of sesame seeds
- peanuts (optional)
- fresh cilantro
- dressing
Preparation
Tbsps EV olive oil, 1 tbsp soy sauce, 1 tsp red curry paste, 1 heaping tsp creamy peanut butter + juice from half a lime, whisked well
