Raw Watermelon Gazpacho

Ingredients

  • 2 cups Persian cucumbers, chopped
  • 2 cups mini yellow tomatoes, quartered
  • 3 green onions, chopped
  • 1 loosely packed cup fresh cilantro, chopped
  • 2 T fresh lemon juice
  • 1/2 large watermelon, or 1 small watermelon

Preparation

  1. Add all ingredients except watermelon to a large bowl

  2. Scoop half of the watermelon into a blender, blend well, and add to the bowl

  3. Chop the other half of your watermelon into small pieces and add to the bowl, along with all of the remaining watermelon juice

  4. Mix all ingredients well and serve
