Chili Cheese Frie
Ingredients
- 2-3 frie cut sweet potatos
- 2 tsp of olive oil
- 1 1/2 cup of chopped yellow onion
- 1/2 cup of chopped red bell pepper
- 1/2 cup of chopped green pepper
- 2 Cloves of garlic
- 2 tbs of minced seranno peppers
- 1 1/2 cup of chopped squash
- 1 1/2 cup of chopped zucchini
- 1 1/2 cup of chopped portobello mushroom
- 2 Tbs of chili powder
- 1 tbs of cumin
- 1/2 tsp of paprika
- 1/4 tsp of black pepper
- 1 cup of black beans
- 1 cup of blended tomato
- 3/4 cup of soaked cashews
- 1/2 cup of filtered water
- 1 tbs of apple cider vinegar
- 1/4 tsp of pink himalayan salt
- 2 tbs of nutritional yeast
- 3/4 tsp of tumeric
Preparation
Preheat oven to 425°
Season fries with salt and paprika then place onto a greased baking sheet and bake for 15 minutes each side
While fries are in the oven place a large pot over medium heat and add olive oil, onion, bell peppers, and serrano peppers
Stir for a few minutes until slightly softened
Then add your zucchini, squash, and mushroom caps
Stir for about 5 to 8 minutes
Now add seasonings til all ingredients are well coated and fragrant
Add tomatoes, beans, blended tomatoes
Let simmer on medium low heat for about 25 minutes
Combine all ingredients for cheese into a blender or food processor and blend until smooth
Remove fries from oven and allow to cool for 5 minutes
Place fries onto dish of choice and top with chili followed by cheese
Garnish with fresh chopped yellow onion and green onion
