Christmas Mince Pies

Ingredients

  • 150gms ground almonds. 25gms coconut oil
  • 1 teaspoon vanilla extract. Pinch of salt. 1/4 teaspoon baking powder. Combine all ingredients together to form a dough. Wrap in cling film & pop into the fridge for 1 hour. Next divide into 12 small balls (save 3 aside to make the stars ? for topping)
  • Filling: 4 juicy medjool dates
  • A large handful of pistachios
  • Rind of 1/4 orange ? and about 2 tablespoons juice
  • 1/4 teaspoon cinnamon

Preparation

  1. Press and mould the other balls into greased mini cupcake moulds to form thin pastry ‘cups’. With the remaining pastry roll Flat. Use star ⭐️ cutters to cut 9 small stars for topping the mince pies

  2. Bake in the oven at 170’ for 10mins. The stars ⭐️ Will only need half the time so keep an eye on them

  3. Grate in a little nutmeg, add a pinch of crushed cloves & crushed green cardamoms

  4. Finely chop the dates and nuts and mix well with the other ingredients

  5. Fill into cooked pastry & they are ready to eat
