Fluffy Kaiserschmarrn Pancakes

Ingredients

  • 650ml plant-based milk
  • 400g flour
  • 2 tablespoons apple sauce
  • 4 tablespoons sugar (plus more for frying)
  • 1 packet vanilla sugar
  • 1 packet baking powder
  • Handful of raisins
  • 6 tablespoons plant-based butter

Preparation

  1. Soak the raisins in water or rum for a few minutes.

  2. Drain the water or rum from the raisins.

  3. In a mixing bowl, combine all the other ingredients except the butter.

  4. Mix in the soaked raisins.

  5. Heat up the plant-based butter in a pan.

  6. Pour the pancake batter into the pan and cook until one side is golden.

  7. Flip the pancake and tear it into small pieces using a spatula.

  8. Add more butter and sprinkle sugar over the torn pancake to caramelize it.

  9. Serve the Kaiserschmarrn pancakes with powdered sugar, apple sauce, berry sauce, stewed plums, or maple syrup.
