Fluffy Kaiserschmarrn Pancakes
Ingredients
- 650ml plant-based milk
- 400g flour
- 2 tablespoons apple sauce
- 4 tablespoons sugar (plus more for frying)
- 1 packet vanilla sugar
- 1 packet baking powder
- Handful of raisins
- 6 tablespoons plant-based butter
Preparation
Soak the raisins in water or rum for a few minutes.
Drain the water or rum from the raisins.
In a mixing bowl, combine all the other ingredients except the butter.
Mix in the soaked raisins.
Heat up the plant-based butter in a pan.
Pour the pancake batter into the pan and cook until one side is golden.
Flip the pancake and tear it into small pieces using a spatula.
Add more butter and sprinkle sugar over the torn pancake to caramelize it.
Serve the Kaiserschmarrn pancakes with powdered sugar, apple sauce, berry sauce, stewed plums, or maple syrup.
