Raw Blueberry Cashew Cheesecake
Ingredients
- 100g walnuts
- 100g pecans
- 50g dates
- 100g of cashews (soaked for 3 hrs)
- 50g blueberries
- half a banana
Preparation
In a food processor mix up 100g walnuts,100g pecans, 50g dates until they form a course mix and the mixture sticks together. Press the mixture into a dish and put it in the freezer to firm up
In a blender, whiz 100g of cashews (soaked for 3 hrs), 50g blueberries and half a banana until it’s smooth
Spoon the mixture into the base and freeze for a few hours until firm
