Raw Blueberry Cashew Cheesecake

Ingredients

  • 100g walnuts
  • 100g pecans
  • 50g dates
  • 100g of cashews (soaked for 3 hrs)
  • 50g blueberries
  • half a banana

Preparation

  1. In a food processor mix up 100g walnuts,100g pecans, 50g dates until they form a course mix and the mixture sticks together. Press the mixture into a dish and put it in the freezer to firm up

  2. In a blender, whiz 100g of cashews (soaked for 3 hrs), 50g blueberries and half a banana until it’s smooth

  3. Spoon the mixture into the base and freeze for a few hours until firm
