Winter Quinoa Tabbouleh Salad

Ingredients

  • 1 cup popped and cooked quinoa
  • 1/2 blood orange
  • 1.5 cups fresh parsley
  • 2 oven roasted beetroots
  • 1/2 blood orange
  • 1 spring onion
  • 1/2 red onion
  • 5 cherry tomatoes
  • 1 teaspoon blood orange zest
  • Juice from 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  1. Chop the fresh parsley, spring onion, red onion, cherry tomatoes, and one half of the blood orange

  2. Zest the blood orange and juice the lemon

  3. In a large bowl, combine all ingredients and mix well
