Gluten-Free Toast with Macadamia Cream Cheese

Ingredients

  • 1 cup raw, unsalted macadamia nuts
  • Juice of 1/2 lemon
  • 1 teaspoon Himalayan salt
  • 1/2 cup finely chopped chives or dill
  • 1 tablespoon extra virgin coconut oil
  • Optional: nutritional yeast
  • Optional: black pepper

Preparation

  1. Soak the macadamia nuts in water for 2 hours.

  2. Drain the nuts and blend them with lemon juice, salt, coconut oil, chives or dill, and optional nutritional yeast and black pepper until smooth and creamy.

  3. Toast a slice of gluten-free bread.

  4. Spread the macadamia cream cheese on the toast and serve.

Notes

  1. Macadamia nuts are rich in protein and minerals, promoting digestive health.

  2. For a sweeter version, add vanilla, cinnamon, and nutmeg to the cream cheese mixture.

  3. Can be used as a dip for fruits or a topping for cakes.
