Gluten-Free Toast with Macadamia Cream Cheese
Ingredients
- 1 cup raw, unsalted macadamia nuts
- Juice of 1/2 lemon
- 1 teaspoon Himalayan salt
- 1/2 cup finely chopped chives or dill
- 1 tablespoon extra virgin coconut oil
- Optional: nutritional yeast
- Optional: black pepper
Preparation
Soak the macadamia nuts in water for 2 hours.
Drain the nuts and blend them with lemon juice, salt, coconut oil, chives or dill, and optional nutritional yeast and black pepper until smooth and creamy.
Toast a slice of gluten-free bread.
Spread the macadamia cream cheese on the toast and serve.
Notes
Macadamia nuts are rich in protein and minerals, promoting digestive health.
For a sweeter version, add vanilla, cinnamon, and nutmeg to the cream cheese mixture.
Can be used as a dip for fruits or a topping for cakes.
