Holiday Chocolate Chip Cookies with Coconut and Spice

Ingredients

  • 1 cup vegan margarine
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 flax eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • A pinch of salt
  • 1 cup dairy-free chocolate chips
  • 1/2 cup shredded coconut

Preparation

  1. Preheat the oven to 375°F.

  2. Prepare flax eggs by mixing 2 tablespoons ground flax seed with 4 tablespoons warm water and letting it sit for 5 minutes.

  3. Using a stand or hand mixer, whip together vegan margarine, brown sugar, and vanilla extract until fluffy, about 3 minutes.

  4. Add the flax eggs and mix for an additional 30 seconds.

  5. In a separate bowl, mix together flour, baking soda, cinnamon, salt, and shredded coconut.

  6. Combine the dry and wet ingredients together until dough forms.

  7. Fold in dairy-free chocolate chips.

  8. Scoop 1 tablespoon of dough onto parchment-lined baking sheets.

  9. Bake for about 10 minutes. This recipe makes approximately 48 cookies.
