Holiday Chocolate Chip Cookies with Coconut and Spice
Ingredients
- 1 cup vegan margarine
- 1 cup brown sugar
- 1 tsp vanilla extract
- 2 flax eggs
- 2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- A pinch of salt
- 1 cup dairy-free chocolate chips
- 1/2 cup shredded coconut
Preparation
Preheat the oven to 375°F.
Prepare flax eggs by mixing 2 tablespoons ground flax seed with 4 tablespoons warm water and letting it sit for 5 minutes.
Using a stand or hand mixer, whip together vegan margarine, brown sugar, and vanilla extract until fluffy, about 3 minutes.
Add the flax eggs and mix for an additional 30 seconds.
In a separate bowl, mix together flour, baking soda, cinnamon, salt, and shredded coconut.
Combine the dry and wet ingredients together until dough forms.
Fold in dairy-free chocolate chips.
Scoop 1 tablespoon of dough onto parchment-lined baking sheets.
Bake for about 10 minutes. This recipe makes approximately 48 cookies.
