Spiced Cranberry Cookies for Holiday Treats

Ingredients

  • 1 cup vegan margarine
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 flax eggs (2 tbsp ground flax seed mixed with 4 tbsp warm water, left sit for 5 mins)
  • 2 cups flour
  • 1 tsp baking soda
  • A pinch of salt
  • 1 tsp ground nutmeg
  • 2/3 cup dried cranberry
  • 2/3 cup walnuts, chopped

Preparation

  1. With a stand or hand mixer, whip together margarine, vanilla and sugar together until fluffy (about 3 mins).

  2. In a separate bowl, mix together flour, baking soda, ground nutmeg and salt.

  3. Combine dry and wet ingredients together until dough forms.

  4. Stir in dried cranberries and chopped walnuts.

  5. Scoop 1 tbsp of dough onto parchment lined baking sheets and gently press down with a fork.

  6. Bake in a pre-heated oven at 375 degree F for about 10 mins.

  7. Makes 48 cookies.
