Spiced Cranberry Cookies for Holiday Treats
Ingredients
- 1 cup vegan margarine
- 1 cup brown sugar
- 1 tsp vanilla extract
- 2 flax eggs (2 tbsp ground flax seed mixed with 4 tbsp warm water, left sit for 5 mins)
- 2 cups flour
- 1 tsp baking soda
- A pinch of salt
- 1 tsp ground nutmeg
- 2/3 cup dried cranberry
- 2/3 cup walnuts, chopped
Preparation
With a stand or hand mixer, whip together margarine, vanilla and sugar together until fluffy (about 3 mins).
In a separate bowl, mix together flour, baking soda, ground nutmeg and salt.
Combine dry and wet ingredients together until dough forms.
Stir in dried cranberries and chopped walnuts.
Scoop 1 tbsp of dough onto parchment lined baking sheets and gently press down with a fork.
Bake in a pre-heated oven at 375 degree F for about 10 mins.
Makes 48 cookies.
