Vegan No Bake Chocolate and Mango Cake
Ingredients
- 1 cup(120g) sunflower seeds, chopped
- 2 tbsp raw cacao powder
- 1/2 tsp cinnamon
- pinch salt
- 8 dates, pitted and chopped
- 1 tbsp agave
- chocolate layer
- 150g vegan dark chocolate, finely chopped
- 1 tbsp agar
- 1 tbsp maple syrup
- mango layer (dark)
- 2 tbsp agave
- 1 tbsp agar
- place back into fridge to set (about 30 min)
- mango layer (light)
- 2 tbsp agave
- 1 tbsp agar
Preparation
Place all the ingredients in a food processor and process until a sticky dough forms. Press the dough into the tart tin and place into the refrigerator whilst making the filling
Pour the oat cream and agar in a saucepan and bring to a brief boil, stirring continuously
Simmer until it starts to thicken
Stir in the chopped chocolate and mix until well combined
Add the maple syrup and pour the mixture on the crust layer
Place into fridge to set (about 30 min)
Combine all the ingredients in a saucepan and mix well. Bring to a brief boil and simmer until it starts to thicken
Let it cool down until lukewarm, stirring from time to time, then pour the mixture over the chocolate layer
Place back into fridge to set (about 30 min)
Same procedure as the mango layer
