Corn and Zucchini Fritters
Ingredients
- 250g fresh corn
- 350g zucchini, thickly grated
- 4 large spring onions, thinly sliced
- 1/4 teaspoon hot cayenne pepper
- 1 1/2 teaspoons cumin powder
- 1-2 large cloves garlic, crushed
- 115g besan flour (chickpea)
- Salt and pepper
Preparation
Place all the ingredients into a bowl and combine.
Leave for approximately half an hour for flavours to intensify.
Heat a little olive oil in a frying pan and add approximately 1/3 cup of the mixture, pressing it gently in the cup, then transfer to the pan and flatten gently.
Cook each side on medium heat for approximately 2-3 minutes or until browned.
Gently flip over and cook the other side.
Get back into bed and eat straight away.
