Corn and Zucchini Fritters

Ingredients

  • 250g fresh corn
  • 350g zucchini, thickly grated
  • 4 large spring onions, thinly sliced
  • 1/4 teaspoon hot cayenne pepper
  • 1 1/2 teaspoons cumin powder
  • 1-2 large cloves garlic, crushed
  • 115g besan flour (chickpea)
  • Salt and pepper

Preparation

  1. Place all the ingredients into a bowl and combine.

  2. Leave for approximately half an hour for flavours to intensify.

  3. Heat a little olive oil in a frying pan and add approximately 1/3 cup of the mixture, pressing it gently in the cup, then transfer to the pan and flatten gently.

  4. Cook each side on medium heat for approximately 2-3 minutes or until browned.

  5. Gently flip over and cook the other side.

  6. Get back into bed and eat straight away.
