Easy Mushroom Avocado Toast

Ingredients

  • 1 tbsp coconut oil
  • 8 oz/227 g cremini mushrooms
  • pinch sea salt
  • 2 slices toast of choice
  • 1 avocado
  • pine nuts, for sprinkling

Preparation

  1. Sauté coconut oil, mushrooms and salt in a medium skillet on medium-high heat until brown and soft, about 12 minutes.

  2. Smash avocado onto bread slices and top with the browned mushrooms, sprinkle with pine nuts more sea salt, and serve.
