Fresh Quinoa Salad with Asparagus and Mango

Ingredients

  • 400g asparagus
  • Olive oil
  • 250g cooked quinoa
  • 1 mango
  • 300g cherry tomatoes
  • 1 avocado
  • Handful of radishes
  • Handful of coriander
  • 1 large lime

Preparation

  1. Chop and sauté the asparagus in olive oil.

  2. Finely chop the mango.

  3. Halve the cherry tomatoes.

  4. Chop the avocado, radishes, and coriander.

  5. Squeeze the juice from the lime.

  6. Mix all the prepared ingredients together and serve immediately.
