Strawberry Rhubarb Pie Smoothie Bowl
Ingredients
- 2 cups chopped rhubarb (cooked until soft)
- 2 large ripe bananas
- 2 cups fresh strawberries
- 1 sweet apple, cored and quartered
- 1/2 cup rolled oats
- 3 large medjool dates, pitted
Preparation
Cook the chopped rhubarb until soft.
In a blender, combine the cooked rhubarb, bananas, strawberries, apple, rolled oats, and pitted dates, then blend until smooth.
Pour the mixture into bowls and top with your favorite granola.
