Strawberry Rhubarb Pie Smoothie Bowl

Ingredients

  • 2 cups rhubarb, chopped
  • 2 large ripe bananas
  • 2 cups fresh strawberries
  • 1 sweet apple, cored and quartered
  • 1/2 cup rolled oats
  • 3 large medjool dates, pitted

Preparation

  1. Cook the chopped rhubarb until soft.

  2. Blend the cooked rhubarb with bananas, strawberries, apple, oats, and dates until smooth.

  3. Pour the mixture into bowls.

  4. Top with your favorite granola and serve.
