Red White and Blueberry Smoothie Bowl

Ingredients

  • 1 1/2 cups white beans, drained and rinsed
  • 2 large very ripe bananas
  • 1/4 cup full fat coconut milk
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons organic lemon zest
  • 1/8 teaspoon fine sea salt
  • 2 large medjool dates, pitted
  • 2 cups frozen strawberries

Toppings

  • Fresh blueberries
  • Granola

Preparation

  1. Blend the white beans, bananas, coconut milk, lemon juice, lemon zest, salt, dates, and frozen strawberries until smooth

  2. Pour the mixture into bowls

  3. Add fresh blueberries and granola on top and serve
