Banana Oatmeal Pancake Cereal
Ingredients
- 2 ripe bananas
- 1 cup soy or almond milk
- 3/4 cup rolled oats
- 1 teaspoon baking powder
- 2 tablespoons antioxidant powder (e.g., @unicornsuperfoods)
- Toppings of your choice, for serving
Preparation
Add the ripe bananas, soy or almond milk, rolled oats, baking powder, and antioxidant powder into a blender.
Pulse the ingredients until smooth. Let the mixture sit for 7 minutes.
Pour the batter into a squeeze bottle or use a teaspoon.
Heat a non-stick frying pan over medium heat and brush it with oil.
Squeeze out mini pancakes onto the pan. When bubbles appear, flip the pancakes and fry them on the other side until golden brown.
Repeat the process with the remaining batter.
Serve the pancake cereal warm with your favorite toppings.
