Hemp Veggie Breakfast Bowl

Ingredients

  • 1 cup chopped lacinato kale
  • 1/2 teaspoon extra virgin olive oil
  • 1 teaspoon lemon juice
  • 3 sliced cremini mushrooms
  • 1/2 sliced bell pepper
  • 1/4 diced red onion
  • 1/2 sliced avocado
  • handful cherry tomatoes
  • 2 tablespoons hemp seeds
  • salt and pepper to taste
  • hot sauce of choice

Preparation

  1. Massage the kale with hands until tender and add it to the serving bowl.

  2. Heat 1 teaspoon of extra virgin olive oil in a cast iron skillet over medium-high heat and sauté the vegetables for 3-4 minutes. Season with salt and pepper or other desired seasonings, then add them to the bowl with the kale.

  3. Arrange the sliced avocado in a rose shape and place it on top of the bowl. Add the cherry tomatoes, hemp seeds, hot sauce, and an extra squeeze of lemon.
