Umami Veggie Hempseed Bowl
Ingredients
- 1 C mushrooms, sliced
- 1/4 tsp salt, pepper, garlic powder
- 2 C spinach, steamed
- 1 C lacinto kale, chopped
- 1 lemon
- 1/2 tsp olive or avocado oil
- 1/2 heirloom tomato, sliced
- 2 TBSP hemp seed
- 1 tsp EBTB seasoning, if desired
- balsamic vinegar or hot sauce
Preparation
Heat a cast iron skillet over medium high heat and add a small amount of oil or water. Add in sliced mushrooms and sauté for 5-7 minutes until golden and crisp, seasoning with salt, pepper, and garlic powder.
Add chopped kale to a bowl and add juice of 1/2 lemon and olive oil. Massage with your hands for 15-30 seconds until tender.
Drain spinach and add to bowl with kale. Top with sautéed mushrooms, sliced tomato, hemp seeds, a squeeze of extra lemon juice and optional seasoning, balsamic vinegar, or hot sauce.
