Tofu Scramble Bowl with Veggies
Ingredients
- Tofu
- Sweet potatoes
- Mushrooms
- Cherry tomatoes
Preparation
Preheat the oven and roast the sweet potato cubes until tender.
Crumble the tofu in a skillet and cook over medium heat.
Add mushrooms and cherry tomatoes to the tofu mixture and sauté until softened.
Assemble the tofu scramble and roasted sweet potatoes in a bowl and serve.
