Tofu Scramble Bowl with Veggies

Ingredients

  • Tofu
  • Sweet potatoes
  • Mushrooms
  • Cherry tomatoes

Preparation

  1. Preheat the oven and roast the sweet potato cubes until tender.

  2. Crumble the tofu in a skillet and cook over medium heat.

  3. Add mushrooms and cherry tomatoes to the tofu mixture and sauté until softened.
