Easy Tofu Dinner Bowl

Ingredients

  • Tofu
  • Asparagus
  • Mushrooms
  • Rice
  • Avocado
  • 2 tablespoons tamari
  • 2 tablespoons rice vinegar
  • 3 tablespoons water
  • 1 teaspoon cornstarch

Preparation

  1. Cook the tofu in the air fryer at 200 degrees C or 390 F for about 5 minutes.

  2. Add the tofu to a non-stick frying pan with 2 tablespoons tamari, 2 tablespoons rice vinegar, 3 tablespoons water, and 1 teaspoon cornstarch, and cook on low-medium heat for 2-3 minutes until the sauce thickens.

  3. Cook rice according to package instructions.

  4. Sauté mushrooms with tamari until tender.

  5. Cook asparagus by steaming or sautéing until tender.

  6. Assemble the bowl with rice, tofu, asparagus, mushrooms, and sliced avocado.
